Why does granite magma forms more than just granite when it cools?

Because Granite is a very limited compositional term for what precipitates from a so called "granitic" magma. If there is slightly more quartz and less orthoclase, then it is no longer Granite. The proper term for a "granitic" magma is actually an Acidic Melt.
